Easy home made gifts: Cranberry White Chocolate Cookies in a Jar

[UPDATE: Amended the flour content to the recipe after three out of five attempts, I discovered the most reliable amount to use for best results.]
I had been wanting to try this idea out for some time now, and with the recent teacher gift season we just had, I thought would be a great reason to get cracking on it. I had also been hunting for jusssst the right recipe for some time now – brownies, cake-in-a-cup, etc., but then I realised I’m actually a bonafide cookie monster (seriously, you should see my posts on cookies already), so why not just stay true to myself and go with that.

Of course, if you throw in a big bag of Christmas, and my major weakness for it, I thought something cranberry-ish would be just the perfect compliment to the season itself. Therefore, enter: Cranberry white chocolate cookies!!! I found one that I then modified a bit to fit into a coffee jar!

I swear its easy peaziest home-made gift you’ll ever make, whilst also being incredibly delicious. So easy in fact, both my four year old and two year could join in and help me make it. Besides, I mean, c’mon: Chocolate? Cranberries? Do you really need any more convincing?!

Come to think of it, with some of my neighbours already away on holiday, and me missing them in our annual cookie handouts, I’m thinking I’ll rather gift the rest of them with these – as opposed to cookies that are no longer as fresh on their return.

So, lets cracking shall we?!
What you will need:

    -About a litre jar. (I upcycled coffee jars, and they worked out perfectly.)

    -1/3 cup packed Brown Sugar
    -1/3 cup Sugar
    3/4 1 cup Flour
    -1/2 tsp Baking Powder
    -1/8 tsp Baking Soda
    -1/8 tsp Salt
    -1 cup Oats (normal Jungle Oats is perfect or Quaker Oats)
    -1 cup white chocolate chips
    -1 cup dried Cranberries

Method:

    1. Pour sugar in the jar.
    2. Firmly press down to create clean layers.
    3. Pour brown sugar in the jar.
    4. Firmly press down.
    5. Combine flour, baking soda, baking powder and salt in a separate bowl and mix.
    6. Pour this mix into jar and press down.
    7. Layer in the oats, cranberries, and white chocolate chips, pressing down each layer.

You can decorate your jar if you so desire, I would recommend you decorate it before pouring in ingredients, so as to not disturb the layers.
Tip: To keep the layers more even, I recommend rotating your jar slowly as you pour each layer in.
Now you’ll need to add a tag with directions for the recipient as to what else needs to be added, as well as baking directions:

    • 125g butter, melted and cooled
    • 1 egg, lightly beaten
    • 1 teaspoon vanilla extract

Baking directions:

    1. Preheat oven to 190’C
    2. Empty contents of jar into mixing bowl and add butter, egg and essence. Mix well till combined.
    3. Shape tablespoons of mixture onto lined baking trays (approx. 5cm apart)
    4. Bake for 10-15 min or until browned.
    5. Let cool.

And that’s it folks! See? I promised it would be easy. And to top it off, on school pick up, so many of the other teachers who saw it all gushed about it, and kept picking it up to check it out. So I’ll take that as a #win! Quick, easy, yummy and well –received – not to mention: cookies!
